Tulum’s Yucatan Peninsula is a haven of thick jungle, Ancient Mayan ruins, and white sand beaches. It’s essentially everything you want in a beautiful holiday to Mexico. There are so many things to do in Tulum, including that loveably cheesy photoshoot spot near the Tulum sign.

Tulum is tucked away on the eastern coast, south of Mexico’s Riviera Maya. It is just a short drive south of the tourist hubs of Cancun and Playa del Carmen , making it the perfect place to make a base when exploring Mexico’s Yucatan Peninsula. Its convenient location means you can mix up days of adventure with moments of pure chill, all within a stone’s throw from each other.

1. Tulum Mayan Ruins

The Tulum Ruins are located just 20 minutes from the Tulum city center, and should be the first stop on your list. They have a dramatic setting, overlooking the gorgeous Caribbean Sea and the white sand beach below.

Compared to other ruins sites in the Yucatan, the Tulum Mayan Ruins are small. However, it’s one of the most beautiful ruins in Mexico thanks to its privileged location on the cliffside.

Inside, you’ll see the Templo del Viento (Wind Temple), Templo del Dios Descendente (Temple of the Descending God), El Castillo (The Castle), and Templo de Los Frescos (Temple of the Frescoes). There is a designated pathway to walk along, so if you follow the path, you won’t miss a thing.  This guided tour  takes you through the archeological site and a visit to Cenote Chen Há and Mariposa  cenotes.

You  can tour the entire  site in about one hour , but when you visit the ruins, try to go early in the day because there’s no shade, and it gets very, very hot. The cenote hole with its ladder is one of the most photographed places in Tulum, and when you see it, you will understand why. Inside the main pool, there is also a swing, which also is a cool photo spot.

The cenote is surrounded by greenery and colorful sun loungers where you can dry off and catch some sun. There is also a snack shop, and as at most cenotes – showers, toilets and changing rooms. Cenote Calavera is situated just outside Tulum downtown, off the main road to Coba Mayan ruins, and you can easily cycle to its entrance or grab a taxi.

Of Tulum town’s nearby cenotes, Cenote Calavera is the one that is the most covered by the rock above. It has a natural cavern feel, which is atmospheric and makes for a unique swimming spot. For an entry ticket of around $40 , you can scale the building to the top for a beautiful view over Tulum from its observation deck. If you visit Tulum and love scenic views, you know where to visit. Better yet, Tulum Tower is just a 10-minute drive or 40-minute walk from Tulum town center.

11. Playa Ruinas

Tulum has a lot of gorgeous beaches, but Playa Ruinas takes the biscuit when it comes to dramatic appeal. This beach is a tiny strip of bright white sand with the remains of an ancient Mayan city overlooking it from a grassy cliff top. Visitors have both the beach and ruins to appreciate, and the beach is just 20 minutes from Tulum by car or an hour on foot through the Parque Nacional Tulum.

12. Tulum Gran Cenote

Speaking of significant cenotes, Tulum Gran Cenote is one of the most beautiful things to do in Tulum. And, only a 10-minute drive or 15-minute cycle from the town center, this cenote is also one of the most convenient Cenote to visit. This cenote is a glass-blue pool with limestone rock and a spectacular cavern. You access the cenote via a flight of steep steps, stepping down into the pool partially underground in a massive sinkhole-type structure. To visit the cenote, you can swim and snorkel or stay on the main boardwalk, providing a beautiful, scenic view.

Gran Cenote has  incredible  wildlife. If you opt to swim, you can see turtles, fish, and even bats or birds if you take a peak into the cavern. We don’t throw the word magical around often, but the cenote ticks that box. Climbing down into the cenote adds to that mystical allure, creating one of the most unique swimming spots you’ll ever experience.

13. Laguna de Kaan Luum

Okay, let’s take a brief pause from all these beautiful cenotes. Next up is a pastel-turquoise lake called Laguna de Kaan Luum. Laguna de Kaan Luum is stunning, stretching as far as the eye can see in a vast expanse of shallow, pastel-blue water.

The lake is shallow and perfect for swimming – people use the nearby swimming pier when not admiring the water from a swinging hammock. There are also tons of traditional beach huts with food and drink available. Laguna de Kaan Luum’s winning quality is best appreciated aerially, though; in the lake’s center, there is a vast dark blue patch of deeper water. Laguna de Kaan Luum has a beautiful natural coloring, and the different depths create a characteristic pattern of varying color blues.

The lake is just a 15-minute drive from Tulum or a (quite challenging) 40-minute bike ride. You’ll pass a few cenotes on your way. It is a brilliant spot to spend a handful of hours, especially in the late afternoon when you want a refreshing dip.

14. Punta Laguna Nature Reserve

Punta Laguna Nature Reserve is another spectacular lake near Tulum. However, you can expect two specific animals – howler and spider monkeys- instead of stunning watercolor patterns at this attraction. The spider monkeys at the reserve are completely free to see, and it is an ethical way to get up close to them. You can also take ziplines around the reserve as an extra fun touch.

A 50-minute drive from Tulum town, this nature reserve is the place for ethical wildlife watching and a great day trip. We recommend it for families as a zoo alternative.

15. Escultura Ven a la Luz

Escultura Ven a la Luz is an influencer’s paradise. The whole venue is designed for one big photoshoot, and you can snap pictures next to colossal statues made from rustic materials. While this attraction sits inside the Ahau Hotel, you can pay a tiny fee to enter and see the best statues. If you are planning a beach day, it is a must-detour attraction.

Escultura Ven a la Luz is 20 minutes away from Tulum town by car or 30 minutes by bike. Situated in the Tulum Beach district, getting away from the town center for a bit of coastal buzz is brilliant.

16. Zona Arqueologica de Muyil

The Muyil ruins are situated just on the outskirts of the vast Sian Ka’an Biosphere Reserve. If you want old Mayan architecture, visiting these ruins is some of the best things to do in Tulum.

The steep-walled pyramids are a much lesser photographed site, an ideal solution to avoiding the crowds that inevitably accrue outside sites like Chichen Itza. The Muyil ruins are quieter and much less trampled. And the actual site dates back as far as 300 BCE to 1500 CE.

The Muyil ruins are a 20-minute drive south of Tulum. Combine it with a visit to the biosphere reserve and Santuario de Cenotes – a beautiful cenote with barely any crowds compared to the cenotes scattered around Tulum Center.

17. Cenote Azul

Cenote Azul is one of the  most incredible Mexican cenotes  and things to do in Tulum. This cenote is 30 minutes from Tulum by car, but well worth the extra miles. The water is (as you might guess) a bright, bright blue. Despite its tinted color’s strength, you can also see all the way to the bottom.

It is so clear. It is so clear, in fact, that you’ll be able to count all the tiny fish that inevitably give you a pedicure experience. Surrounded by tropical jungle, Cenote Azul is a top-day trip from Tulum. It has that jungle aesthetic that many people pursue on a Tulum holiday.

Tankah is one of the prettiest things to do in Tulum. Absolutely breathtaking, the nature park is a beautiful collection of crystal-clear lagoons. You venture around the different lagoons using an exciting mix of trails – and even zip lines – with Mayan ruins and jungle dotted around the park to greet you as you walk.

It is a beautiful place to spend a few hours, especially in the morning when the weather is cooler and less humid. Tankah perfectly blends together excitement and natural beauty.

Tankah is just a 20-minute drive from the town center. If you feel energetic, you can easily catch a taxi or bike there in about 30 minutes.

19. Cenote Escondido

Seemingly arising out of just jungle and mangrove swamps, Cenote Escondido is one of Tulum’s most magical cenotes. Despite its proximity to the town center, Cenote Escondido feels remote and isolated – only accessible by a pretty rugged-looking hiking trail that takes 15 minutes to tackle.

Of course, all of these factors add to the adventurous element of visiting this cenote tenfold. You pay a fee at the trailhead and get unlimited daily access to the swimming hole. And at the cenote, there is a rope swing to jump into the water, plus changing rooms for the more shy tourists. While minimalistic, it definitely has everything you need for a refreshing afternoon.

Cenote Escondido is one of the best things to do in Tulum; beautiful, reasonably quiet, isolated, and just a 10-minute drive from Tulum town; it is a must for your Tulum itinerary. You can even cycle there in less than 15 minutes if you prefer to bike.

20. Casa Cenote

Casa Cenote is one of the all-time favorite cenotes near Tulum. While it is further away from the town center – 20 minutes by car – it is one of the largest cenotes in the area and is famous for diving and snorkeling. You can visit independently or on a guided tour.

We’d suggest taking a scuba diving or snorkeling tour to get the most out of the experience; getting extra direction will help you engage better with wildlife and understand more about the cenote. Go for a swim, snorkel, or scuba dive and enjoy one of Tulum’s largest, most exciting cenotes.

Casa Cenote has the ‘big wide world factor’ and is an amplified version of other smaller cenotes. There is even a local crocodile called “Panchito” that you can see from a distance, and most tours take you to visit him before you finish. He is said to be very friendly, but we wouldn’t get too close. Aside from Panchito, there are tons of fish and wildlife in the surrounding jungle, too, often including little raccoons venturing down to look for a snack.

21. Playa del Carmen

Playa del Carmen is known for its amazing beaches and resort city buzz. Only some people are cut out for days and days in a relatively sleepy town, so if you need a city fix, Playa del Carmen is where to take a day trip to.

Consider this one of the best things to do in Tulum to get away from actual Tulum. We’d suggest walking Quinta Avenida – a promenade meets thoroughfare along the beachfront with restaurants and bars. You can enjoy significant museums and attractions like the 3D Museum of Wonders and Playacar Mayan Ruins.

FORBES travel expert features editorial on Tulum’s “Taste Of Mexico Festival”

The weeklong  Taste of Mexico Tulum Food, Spirits and Wine Festival  (TOM) concluded on Sunday, February 10, 2019, leaving a group of food lovers tired, sated and marking their calendars for 2020.

Tulum is one of Mexico’s hippest destinations, especially for the yoga/bohemian set and Instagram/influencer models and their groupies. It’s also an appealing retirement destination for American expats; outside the tourist-crazed beach zone, cost of living eases into the manageable realm. Curiously, those communities didn’t collide throughout the week.

Though the festival held events in several of Tulum’s Instagram-friendliest hotels, starting with the brutalist/concrete blocks of  Casa Malca , a former Pablo Escobar property, to the  Hip Hotel , site of heaving beachfront crowds devouring tacos by day, the patrons of the festival were largely well-behaved expat retirees who had never heard of Friday nights at  Gitano’s .

This information proves relevant only if you’re hoping your dinner crew will carry on until 7 AM at Papaya Playa. Of course, you’re welcome to go  after  but not likely with your festival companions.

But those  dinners …that’s a key – the key – reason for alighting on Tulum during Taste of Mexico week. Enjoying regional dishes reinterpreted through the lens of star chefs, beats the overpriced beach hotel joints any day.

The festival was started three years ago by Diane DiMeo, who continues to serve as TOM’s founder and executive director. “I created the Taste of Mexico experience to bring Mexico to the world so that the world can learn and understand the artisanal culture of this amazing country through food, culture, spirits, wine and beer,” said DiMeo. “Our third edition for 2019 promises more chefs, more booze, more culture and more excitement for our guests who come to Tulum from around the globe to savor our unique caliente style of life.”

Intrepid festival attendees could also opt for a six-course Cannabis tasting menu in a secret, password-required location. Tulum serves as a rather ideal spot for such an event given the wide availability of cannabis products.

Tulum airport opens to U.S. flights, helping tourists skip Cancún crowds

Traveling to the Mayan Riviera in Mexico is about to get easier.

Starting this week, visitors to the east coast of the Yucatán Peninsula can say goodbye to the crowded halls of the Cancún airport and potentially hours-long drive south; U.S.-based flights to recently opened Tulum International Airport start Wednesday.

American Airlines and Delta Air Lines begin flights on March 28, followed by United Airlines on March 31. The new routes will connect Tulum to major hubs like Atlanta, Dallas-Fort Worth, Houston, Miami, and Newark.

Air Canada starts flying to Tulum in May, and JetBlue Airways and Panama’s Copa Airline s in June.

“Imagine taking a morning flight from the United States, and by lunchtime, you’re sipping margaritas on our beautiful beach,” said Laura Diver, the marketing manager for Colibri Boutique Hotels , which manages several properties in Tulum.

A bumpy start

The Tulum airport, like many of the big recently opened infrastructure projects championed by Mexican President Andrés Manuel López Obrador, remains a work in progress.

Construction continues despite some domestic flights beginning in December. Karla Cayetano, a reservations manager at the Kanan Tulum resort, said workers were still “finishing some details” to the terminal and access road. Despite this, she said some of the resort’s guests are already arriving there rather than to Cancún.

Ground transportation options are limited and costs are high. David Ortiz Mena, the president of the Tulum Hotel Association, highlighted this as a “great concern” in a December statement . Talks with the airport and government authorities over lowering the ground transportation tax were still underway in mid-March.

And protesters have blocked the access road to the airport, and adjacent Tren Maya station, over land rights.

The issues are not unlike those that have plagued the Tren Maya since it opened in December. Trains are limited and delays are frequent on the ambitious and controversial 947-mile passenger rail loop pushed by the Mexican president. The booking system has been unreliable . Much of the track that will eventually encircle the Yucatán has yet to open.

But the Tulum airport, like the Tren Maya, is widely expected to significantly improve access to the Mayan Riviera once the kinks are worked out.

Alternative to Cancún

The Mayan Riviera is one of the most popular beach destinations in Mexico. It stretches from north of the all-inclusive resorts of Playa del Carmen to south of chic Tulum, with its beachside Mayan ruins.

Last year, the Riviera Maya boasted the most available hotel rooms — and occupied rooms — in the country, beating nearby Cancún and Los Cabos on the Pacific coast, according to data from the government of Mexico’s tourism secretary.

The Cancún airport is the main gateway for visitors to the region. In fact, last year the airport was the main gateway to all foreign visitors to Mexico, and the most popular among American tourists. A presentation from Mexico’s tourism secretary shows nearly 4.8 million American visitors to Mexico passed through the Cancún airport last year, representing more than a third of all the Americans who visited the country.

That’s why airlines are clamoring to fly to Tulum, even with its early issues. The new airport gives travelers an alternative to the busy Cancún airport.

“We’re pretty excited about some of the [travel] demand we’re seeing,” said Amy Martin, vice president of North America network planning at Delta.

Churn and Bake in Plano, Texas is an artisan creamery locals love for its Asian-influenced ice cream flavors. Owner Charlie Lin first tasted Vietnamese coffee during college and instantly fell in love with the rich and bitter taste balanced with the lush, sweet, creaminess of the condensed milk. “Traditional rocky road is one of my favorite flavors of ice cream, and I was inspired to make this flavor after tasting this at Wanderlust Creamery in L.A,” says Lin via email. “Our recipe includes Vietnamese coffee and espresso brewed base with marshmallow fluff and chunks of fudge stripe cookies.”

Olive Oil Ice Cream

One of Naples’ most celebrated pizzerias, L’antica Pizzeria da Michele puts an Italian spin on this creamy treat. Executive pastry chef Steven Amador is inspired by seasonal fruits and vegetables at the peak of flavor. He’s especially passionate about the restaurant’s olive oil ice cream, which is topped off with sea salt and fresh pour of olive oil. “The flavor and texture really make it stand out,” says Amador in an email. “Simply made with cream, sugar and milk, it proves to be a solid sidekick to any seasonal dessert preparation.”

Selena Loves Lemons is the name of this froyo served at the Lemon Grove rooftop restaurant at The Aster Hotel & Member Club in Hollywood. Chef Marcel Vigneron created this fun treat in collaboration Selena Gomez to celebrate her passion for lemons. It’s garnished with mini, borage and a sprinkle of salt. “This tart fro-yo, served inside of a hollowed out lemon, is the perfect refreshing treat to eat at The Lemon Grove where our guests are surrounded by lemon trees,” says Vigneron via email.

This unique ice cream flavor from Baar Baar Los Angeles highlights Indian flavors and features some of the most lush and celebrated ingredients from chef Sujan Sarkar’s childhood. He grew up eating (pistachio) kulfi, which has a chewy texture. “Unlike traditional kulfi, our saffron and pistachio ice cream is soft and creamy, offering a perfect balance of sweet and savory flavors with a subtle hint of cardamom,” says Sarkan in an email.

Torilla ice cream

At La Zebra in Tulum , chef’s table dinners feature tortilla ice cream. Executive chef Eleazar Bonilla’s goal was to celebrate the history of corn tortillas, which can be traced back to 10,000 BCE Mexico alongside the first domestication of corn. Although tortillas are often machine-made these days, Mayans and Aztecas hand ground cornmeal to shape into tortillas. Similarly, La Zebra’s chef’s table dishes are also handmade “with fresh corn and cream with a little touch of organic tortilla,” writes Bonilla in an email.

Bati Bati Purple Ube Ice Cream

Named Bati Bati, this delight is the creation of executive pastry chef Genesis Flores of Joy by Seven Reasons in Washington, D.C. Ube is the Tagalog word for purple yam, and this starchy tuber features prominently in Filipino cuisine. The purple ube ice cream is topped with bee pollen, salty peanut caramel, honeycomb toffee, lemon ginger syrup and white and dark chocolate waffle pieces. “It sounds totally crazy, but it actually turned out to be a very balanced and popular dessert on our menu,” says Flores in an email.

Cold Brew Affogato

Tillamook fans will be excited to learn that there’s a Tillamook Creamery restaurant in Oregon. Although some of the most popular items at the restaurant include fried cheese curds and a grilled cheese sandwich with tomato soup, Josh Archibald, executive chef at Tillamook County Creamery Association, loves the cold brew affogato as an afternoon pick me up. “The robust, bright tones of the cold brew combined with the rich, creamy, real vanilla ice cream to make a perfect sip as visitors get back on Highway 101 on the beautiful Oregon Coast,” says Archibald via email.

Vegan Magnums

Besides white sand beaches and cerulean clear waters, the Six Senses Laamu resort in Maldives features an impressive al fresco ice cream parlor with 48 flavors. Local flavors are highlighted, like the Maldivian fruit screw pine. This tropical fruit has a pineapple like appearance and a delicate mango-esque flavor. “Our screw pine flavor ice cream, crafted from the indigenous fruit of the Maldives, offers a uniquely sweet, and distinctly tropical flavor, epitomizing island life,” writes Ihaka Peri, resort director of culinary in an email.

Hay Ice Cream

This one might take the cake on this list of unique ice cream flavors! Hay Ice Cream is the creation of Robin Mailey, chef and owner of The Callicoon Wine Merchant in the Catskills. It’s made simply with local eggs, cream, sugar and the first cut of late spring hay. “As the hay dries in the fields, it obtains an aroma of Honey and Cinnamon. I knew it would make a great ice cream,” says Mailey via email.

Fried Milk Ice Cream

This ice cream flavor became so popular that it's sold by the pint at Uchi restaurants across the U.S. You can order it at the restaurants, as a pint to go or even delivered. This ice cream is the perfect bite and one of the restaurant’s executive pastry chef’s favorite treats. “My favorite bite of the fried milk dessert has always been the sweet cream ice cream with the buttery blondie crumble and the salt fudge sauce,” says Ariana Quant, executive pastry chef, Uchi Restaurants, in an email.

Kimpton Mas Olas ice creams

Baja California's new Kimpton Mas Olas features ice cream flavored by natural ingredients grown on property. The resort and restaurant embraces local produce by growing its own ingredients—which are used to create seasonal blends and flavors. “We grow our own passion fruit (maracuya) and source ingredients like soursop, rosemary, lavender, honey and strawberries from our gardens,” says chef Sandro via email.

This delectable creation features whole chickens broken down into stock and reduced into caramel before being added to the ice cream base. " We then take the chicken skins and render the fat, dehydrate, and create a powder that we make into a waffle batter," says Tavel Bristol-Joseph, chef and partner of Emmer & Rye Hospitality Group and Pullman Market, in an email.

This flavor promises to be your new boozy favorite. Tipsy Scoop creates boozy ice cream with creative flavors and delivers via GoldBelly. This dish is infused with cake flavored vodka and amaretto. “With Tipsy Scoop's Cake Batter Vodka Martini ice cream, you can have your cake and drink it too!” says Rachel Chitwood, CMO (Chief Mixology Officer), via email.

Beeswax Ice Cream

Wildweed is opening in Cincinnati’s Over-the-Rhine neighborhood in July. Chef and Owner David Jackman created a "beeswax" ice cream for a pop-up that will also feature on the opening menu of the restaurant. The ice cream is infused with whole bricks of beeswax, cream and milk. It’s also sometimes luxuriously topped with truffle. “After it’s spun and we’ve let it set we give it the ultimate ‘Wildweed’ sundae treatment with local honey, bee pollen, flaky salt, a generous dose of fennel pollen and grassy olive oil,” says Jackman in an email.

Known for Western Chinese-style flavors, Kwei Fei in Charleston, South Carolina’s unique twist features homemade chili crisp and Sichuan candied peanuts atop its vanilla ice cream. It’s an explosion of salty, spicy and sweet. Co-owner Tina Heath-Schuttenberg says via email that this dish "may be the only time that garlic has made sense in a sundae."

Providence is a two Michelin-starred restaurant known for its sustainably sourced multi-course tasting menus. This flavor is seasonally inspired, featuring flavors chosen by Pastry Chef Mac Daniel Dimla, as he explains via email—including jaggery, a dark brown sugar from from palm tree sap.

Buckwheat Ice Cream

Chicago’s new John’s Food and Wine serves smart American fare and was recently Michelin Guide named. Its buckwheat ice cream also includes strawberry cloud and kombu. Chef Evelyn Aloupas created this flavor while cooking in Europe, she says via email: “I found the combo reminded me of my favorite childhood flavor, cereal milk, which evoked serious feelings of nostalgia.”

South Asian flavor focused ice cream company Malai ’s popular choices include rose with cinnamon roasted almonds, masala chai, carrot halwa, shahi toast and butterscotch butter pecan. The chef uses her family’s exact spice blend in this icy treat. "Our masala chai ice cream is inspired by my mom's daily cup of chai,” says Pooja Bavishi in an email. “She gave me our family's recipe for the blend of spices—heavy on the ginger and black pepper, and rounded out with cinnamon, cardamom and cloves.”

The Lodge at Columbia Point is one of Richland's finest hotels. The hotel's restaurant Drumheller’s Food & Drink is a regional dining destination with flavors inspired by local Washington wine country. The resort’s location gives direct access to local wineries and fresh produce. “The sweetness of locally grown blackberries beautifully complements the dry, dark berry notes of local Pinot Noir for a very refreshing summer treat,” says pastry chef Carissa Noyes via email.

Avocados from Mexico is dedicated to boosting avocado consumption in the U.S. Via its team of chefs, AFM has created sensational ice cream flavors and recipes for the general public. “Avocado and pistachio ice cream inspires your senses, combining the classic pistachio flavor with the creamy, delicious flavor of fresh avocados,” notes Walter Rivas, executive chef of AFM, via email.

New Orleans restaurant Palm&Pine features the cuisines and culinary traditions of “the South and south of that.” About its adventurous curry banana ice cream, Amarys Herndon, chef and co-owner of Palm&Pine says via email that it’s “the perfect, indulgent summer treat, featuring super ripe bananas, rum, and pinch of Trinidadian curry powder garnished with toasted peanuts, coconut flake, and boondi.”

Black Pepper Gelato

Named one of “The 100 Best Restaurants in New York City in 2024” by The New York Times, Foul Witch is an inventive Italian eatery in New York City’s East Village. Its black pepper gelato with brûlée’d lardo showcases whimsical flavors. “When our CDC Michael Park started discussing this dessert with me I have to admit I was a bit skeptical but it is quite balanced and quietly celebratory,” says Carlo Mararchi, chef and owner, via email.

Strawberry Shortcake Bar

Shark Bar is a new beachside bar just opened this past May in Montauk, New York. Its playful beverage menu showcases vintage-inspired frozen and refreshing cocktails alongside seaside classics and imaginative summery dishes like this strawberry shortcake bar. It’s inspired by the Good Humor Strawberry Shortcake Bar, using vanilla ice cream from John’s Drive-in Montauk. “The bar is coated in a crumble of dehydrated strawberries and crumbled cookies,” says Andrew Mahoney, chef de cuisine, via email.

It’s served with honey puffed rice and finished off with chili oil and a sesame tuile. “We've been serving this dish since our opening and it's been one of our favorite things to create because it's creamy, sweet, but still bright from the malic acid note of the apple vinegar,” says pastry chef Janice Sung via email.

Its buttered toast and jam ice cream is handmade and served on sourdough cones. “This one is the breakfast in bed of ice creams,” says chef Ben Brunner in an email. “There's something so simple and decadent about a perfect piece of toast with butter, jam and a sprinkle of sea salt.”

Find this inventive gelato flavor inside the Durango Casino and Resort's restaurant Fiorella . The restaurant features handmade pastas such as cappelletti and cacio e pepe as well as desserts like tiramisu gelatos. Chef Alex Martinez is the father of four and his kids love PB&J UnCrustables—the handheld sandwich treat without the bread crust. “People love pb&j,” says Martinez in an email. “Put both together and boom. Magic.” It’s as simple as that!

This house-made Tahitian vanilla gelato is the picture of simplicity and is made in-house traditionally, using anglaise and the technique of a 24-hour maturation process prior to churning. “By using the finest ingredients and traditional methods, we ensure every scoop is extraordinary,” says says Hotel Bel-Air’s pastry chef Christophe Rull via email.

Chef Richie Farina’s creation is made from waffle-infused ice cream with freeze-dried seasonal fruit, truffle maple syrup and whipped cream. This playful ice cream cosplays as a waffle and pairs with apple syrup and freeze-dried fruit. “So I take Nilla wafflers (to mimic a toasted waffle flavor) and blend them with half & half and a little sugar. I then turn a cast iron waffle iron into an antigriddle by dropping it in liquid nitrogen, pour the ice cream batter into the frozen mold and it sets and freezes into a waffle shape,” shares chef Richie Farina, executive chef of Adorn Bar & Restaurant at Four Seasons Hotel Chicago, via email.

Glace is a sweet shop based in New York and famed for its French ice cream and viral hot chocolate. The Good Humor bar serves as inspiration for its toasted almond ice cream features a similar flavor profile. “Instead of almond extract and fake coloring, we use imported almonds from Sicily, which we grind and blend into the ice cream base, then caramelize the almond pieces and fold them into the almond ice cream,” says founder Sasha Zabar in an email.

Tahini Ice Cream, Served with Baklava

The newly opened Theodora in Fort Greene, New York serves a wood fired, seafood focused menu. It’s tahini flavor premiered at the opening and pairs with house-made baklava. “Chef Tomer brilliantly combined the baklava, tahini ice cream, and whey caramel in a bowl, and we all sat around the counter together eating it in amazement,” says Christina Kavalis, pastry chef at Theodora, via email.
